This little set up is one of those incredibly time specific street eats. Pho Bo is gone by 9am and on to Bun Cha preparation for the restaurant’s lunch time incarnation. Then it is all gone by 1pm….

Pho Bo – Beef broth/stock enhanced with star anise topped with slivers of beef and spring onions

Important accompaniments – Chili sauce, garlic vinegar, and lime
